
The Luscious Lemon Pudding.

Remember what the PC brand one looked like?

It’s completely different looking!
the top is like a meringue crust more than a cake and I ate it pretty hot. It tastes significantly sweeter and more like a pudding. However, that weird taste is still there…I think I’ve pin-pointed it — it’s the lemon zest. That might just be my own opinion…I am, by no means, and expert on any type of cooking or baking or tasting for that matter.
One thing I think I did wrong is I didn’t thicken the egg yolks enough before adding the other ingredients and that’s why the crust is so thin and the pudding so runny…but when it cools down it’s tihcker so I dunno.
Anyway, the recipe is a completely different product than the PC version. But I think the pudding might separate if it was frozen then thawed??? Maybe one of you guys can try that out and let me know what happens.
I can see why this recipe won. It’s simple, yet doesn’t exist anywhere. The flavours are familiar, but it’s still different enough to be it’s own thing. And it’s sweet and great for any occasion.
I can see this dessert being kept cool in the fridge for the summer and warm in the winter as it tastes good either way.
UPDATE: My mom hates it…she had to throw it out….yeah I think I did it wrong.
